First, spray a muffin pan with cooking spray. You need to get it very well-greased in order to not be scrubbing out the baked-on eggs later. (Can you hear the experience in my voice?)
Then break an egg into each muffin cup.
Next salt and pepper each egg and then sprinkle on crumbled bacon and shredded cheese.
Bake them at 325 degrees for about 15 minutes. To me this was the tricky part to figure out. If you bake them too long they will be dry, but if you don't bake them long enough the egg whites will not be set. <blech>
After baking, allow them to cool for a few minutes, then run a butter knife around the edge of each one to release any stuck cheese. Remove from pan.
Serve to hungry children.

ReplyDeleteI've never tried any kind of liner, but when they stick they stick REALLY good! They are TOUGH to scrub out! They don't always stick, though. If you try a liner and it works well, I would love to know what you use! Thanks!
